What I Made on the Weekend

I made some good eats on the weekend.  All from Tasty Kitchen.  I just don’t feel the need to branch out from that site because I always find what I need and its (almost) always excellent (there was the one incident with the burnt broccolis).

FridayBanana Bread

Rating by me – 9/10

Rating by the husband – 8/10 – We both think it needed another banana

Saturday – We had a BBQ with the neighbors and I was assigned the appetizer.  Appetizer is generally not my specialty (dessert totally is) but I found a great BBQ appropriate combo –  Spinach and Artichoke Dip and Pita Chips.

I didn’t modify the dip recipe at all from the original found at the link above.

Pita Chips

  • One bag ot pita bread
  • melted butter
  • Shredded romano or parm cheese

Cut each peice into small triangles and squares.  Pull the layers apart.  Brush with melted butter and sprinkle with cheese.  Bake @ 350 for 7 – 10 mins.  Watch carefully because they go from done to super well done very very quickly.

Do you see in the top there?  That bit taken out?

The husband “tested” it when I wasn’t looking before we left for the BBQ.  Self control, man.

My rating – 9/10

The husband’s rating 10/10   This was a goooooooood recipe.  The pita chips were a bit bland but they were primarily just a vessel to get dip from bowl to face.

Sunday –  Butternut Squash and Chorizo Risotto

There is A LOT of stirring when making risotto.  The rice always takes  so long to cook.  But its worth it.

My rating – 8/10

Husband’s – 8/10

We really liked this one – its recipe card worthy.  I may have added too much Thyme in an effort to get some nice green flecks in a completely orange looking mush. The spicy sausage adds so much to this.  It would be so boring without it.  This was my first time ever cooking with squash.  I hate cutting it.  It was like cutting  a yam – hard. I’m not adept with a knife (almost cut my finger off twice last week) and it was probably painful to watch.  Lots of hacking and squash bits flying everywhere.

(Obviously NOT my picture.)

What did you make this weekend?

Wow. This is Powerful

Just wanted to stop in quickly to post this video.  I came across it on Christina’s blog.  This is a strong message and every single woman can relate to it.

Banana Bread!

Happy Saturday!

I made this lovely banana bread recipe that I found at Tasty Kitchen last night and I think it turn out excellent.  Maybe have been the BEST banana bread I have ever made.   I give it a 9/10.  I wish I’d had one more banana.  Then it would have been 10.  I made a few minor changes from the recipes above.

 Ingredients:

  • 1/2 cup Butter, Room Temperature
  • 1-1/4 cup Sugar
  • 2 whole Eggs
  • 1/2 cup greek yogurt (I used honey flavor b/c I had no plain)
  • 1 teaspoon or more (I just use a capful)Vanilla
  • 1 cup Mashed Ripe Bananas (usually Equals 2 Bananas)*I would use 3 next time
  • 1-3/4 cup Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 pinch Salt
  • LOTS of chocolate chips.  I used 3/4 of the bag.
  • A sprinkle of brown sugar and cinnamon
  • Preheat oven to 325 degrees.Beat together until blended the butter, sugar, eggs, sour cream, vanilla, and mashed ripe bananas.Stir in the flour, baking soda, baking powder, salt, and chocolate chips.Pour batter into 1 big greased loaf pan and any extra batter into muffin pans (I made only one HUGE muffin that I ate immediately after). Sprinkle cinnamon and sugar on top of the batter  (This is may favorite part of the bread. You NEED to do this)  Bake for 60 mins (you will want to keep an eye on it, as ovens vary).

Cool in the pan for 15 minutes before removal.

My oven door is so dirty.  Its embarassing.

This morning is my long run day according to my half marathon program.  21km.  This will be my longest run ever! I hope I can make it. 🙂  Its overcast and rainy outside and I’m pretty happy about that.  I like it when its cooler.  I hate being too hot.  It makes me feel slow.

What is your favorite weather to run in?

Guilty of Being a Biatch

I completed my stressful interview yesterday and did (I think, I hope) awesome. My awesomeness still does not garauntee me the job though.  I did the best I could and I prepared well so its out of my hands.

What was in my control though (and I totally blew it) was how I treated my poor husband through all of my stress.  I was not nice.  When I’m stressed I go from EVERYTHING is funny to NOTHING is funny very very quickly.  For the last few days I was in NOTHING is funny mode and my husband was still cracking jokes and supporting me in his own way.  I did not react well to this and treated him fairly poorly.  Finally he had enough and the straw broke the camel’s back last night.  He is mad.  I don’t blame him one bit.

As someone who is super sensitive, I hate it when people are mad. I hate it even more when I have done something to make them mad.  I feel the guilt.  I was a jerk.  As someone who is super annoying I also like to pester people with love after I make them mad to annoy them into submission.

I’ve said my sorrys and admitted my errors.  But I think tonight calls for some banana bread.  The husband loves banana bread.

I think I’ll use this recipe from Tasty Kitchen.

What do you do for your partner/spouse to make peace when you have been insensitive and a bit of a jerk? (c’mon we ALL have done it)

S T R E S S with a capital STRESS

I have been working on my “assignment” all evening for my job interview tomorrow and I needed a quick break to rest my brain.

This is the most stressful  interview I have ever been a part of.  Why?  Because I already am doing that job.  I have been doing this job for a year covering mat leave and now they need to fill it permenently.  Its not the interview itself that has got my nerves all in a knot (because I am awesome at interviews), its my self confidence.  I have been doing this job for a year.  I have been doing a GREAT job for a year.  An EXCELLENT job….and I have performance reviews to prove it.  Yet they are still going through with a complete (and very thorough) hiring process.  My pride is hurt a bit.  If I have done such a great job then why go through all that trouble of screening and interviewing new people.  JUST PICK ME.  You don’t need to look for someone better, if that is what you are doing.  I’m the best.  The grass isn’t greener, man.

Can you tell I want this job?  I do.  A lot.  I am made for this job.

Blarg.  Thats all.  Good not-unemployed vibes please.

Day three of half marathon training – 9.10 km with a 5.24 pace.  Go me.

For a quick laugh:

Guess What Day it is?????

Today is Camp Day. Buy a coffee

Today is Tim Hortons Camp Day!  Every single cent from all coffees (and hot chocolates) bought today will go toward sending children, who otherwise wouldnt have a chance to go, to camp!  I not only bought one but THREE today.  No, not all for me.  For me and my team.  My poison is an XL half coffee/half hot chocolate.  Mmmmm.  Perfect addition to breakfast.

Now you can add two more things to your to-do list today.  1) Buy a coffee and send a kid to camp. 2) Feel good about yourself 🙂

Do it.  Go.  Now.
